Vendor Updates

The College Hill Farm Market vendors continue to offer the best of the season! Back Acres Farm is your source for seasonal produce, meat, and eggs, Aunt Flora’s brings their cobblers and other speciality items, Like Mom’s Only Vegan has cookies, and Shadeau has apples, pastries, and more. Stay tuned for market updates – some time in the next month the market will likely be transitioning to College Hill Coffee Company for the winter.

Produce Spotlight: Sweet Peppers

Peppers, especially larger bell peppers, tend to accelerate their ripening from immature green to mature red, yellow, orange, etc. in late summer and into early fall, as long as there is no frost. Peppers contain a wide array of phytonutrients, as well as abundant vitamin C, among other vitamins and minerals.

The ratatouille below uses a ton of seasonal veggies, roasted and then tossed in an onion-, herb-, and paprika-heavy tomato sauce. There are lots of ways to make this dish – this version is probably a little less labor-intensive than the movie version! The panzanella featured below is again, just one way to make a bread salad, that uses lots of seasonal produce. It gets a major flavor boost from capers. The red pepper relish is a classic dip to serve with cream cheese and crackers (and it uses a ton of peppers!). The roasted red pepper tomato sauce has an uncanny creaminess that doesn’t come from any dairy (though feel free to add some cream if you’re so inclined!). Finally, the muhammara, or red pepper dip, is an incredible Levantine dip that requires a couple specialty ingredients, but is so worth it.

Remember that you can freeze peppers and cook with them year-round by simply removing the stem, seeds, and membranes. Pre-chop them if you like or leave them in chunks before freezing them raw.
